Flax "Egg"
1/4 Cup Ground Flax
1/4 Cup + 1T Water
Mix with a fork in your "wet ingredient" bowl and let sit while you mix your other ingredients
Dry Ingredients
2 1/2 Cups Rolled Oats
1/4 Cup Almond Flour
1 Cup Sunflower Seeds
1/2 Cup Each Pumpkin Seeds, Sesame Seeds and Sliced Almonds
1/4 C + 1T Chia Seeds
1/2 C Dark Chocolate Chips
1/2 C Dried Cranberries
2t Cinnamon
1t Salt
Remaining Wet Ingredients
1 Maple Syrup
1/2 C + 2T Tahini
1t Vanilla
General Directions
Combine dry ingredients
Add remaining wet ingredients to flax "egg" bowl
Stir dry ingredients into the wet mixture (just use a spoon, no mixer needed)
Scoop onto sheet pan, flatten slightly to create round cookie or leave unflattened, you choose.
Bake at 350 for 12-15 minutes until slightly browned.
Once out of the oven, let the sit for a few minutes so they set.
