Trail Seed Cookies

Flax "Egg"

  1. 1/4 Cup Ground Flax

  2. 1/4 Cup + 1T Water

  3. Mix with a fork in your "wet ingredient" bowl and let sit while you mix your other ingredients

Dry Ingredients

  1. 2 1/2 Cups Rolled Oats

  2. 1/4 Cup Almond Flour

  3. 1 Cup Sunflower Seeds

  4. 1/2 Cup Each Pumpkin Seeds, Sesame Seeds and Sliced Almonds

  5. 1/4 C + 1T Chia Seeds

  6. 1/2 C Dark Chocolate Chips

  7. 1/2 C Dried Cranberries

  8. 2t Cinnamon

  9. 1t Salt

Remaining Wet Ingredients

  1. 1 Maple Syrup

  2. 1/2 C + 2T Tahini

  3. 1t Vanilla


General Directions

  1. Combine dry ingredients

  2. Add remaining wet ingredients to flax "egg" bowl

  3. Stir dry ingredients into the wet mixture (just use a spoon, no mixer needed)

  4. Scoop onto sheet pan, flatten slightly to create round cookie or leave unflattened, you choose.

  5. Bake at 350 for 12-15 minutes until slightly browned.

  6. Once out of the oven, let the sit for a few minutes so they set.
