Carrot Raisin Salad - GF/V

Ingredients

1. 3lbs Shredded Carrots

2. 5 Garlic Cloves Minced

3. 5t Fresh Ginger

4. 1 2/3 Cups Sultana Raisins (or whatever you have)

ree

5. 2 1/2 Cups Toasted Pecans, Cashews or whatever nut you like

6. 1 Bunches Green Onions

7. 1 Bunches Cilantro

8. 1 1/4 Cup Grapeseed or Olive Oil

9. 1/2 Cup Lime Juice

10. 1/2 Cup Apple Cider Vinegar

11. 10T Grade B Maple Syrup

12. 2 1/2t Each Salt and Pepper

13. 2 1/2t Ground Turmeric

14. 5t Curry Powder

15. 1 1/4t Aleppo Pepper, Cayenne or Chili Flake




General Directions

  1. Medium Shred on Carrots

  2. Toast Nuts

  3. Make "sauce" out of all the ingredients except the nuts, cilantro, green onion and raisins

  4. Add sauce to the grated carrots

  5. Add chopped green onion, cilantro, raisins and nuts.
